Bacon & Brat Soup
The weather is turning chilly, so it's time to start making soup! This is one of my family's new favorites! It's warm and Hardy, sure to fill up the family's rumbly bellies! Plus it's cooked in a Crock-Pot so it's super easy for a busy day!
Bacon & Brat Soup
14-16 oz. Brats, but into 1/2 in. Pieces
1/2 lb. Bacon, cut into 1/4 in. Pieces
3 large potatoes, diced
1 onion, chopped
2 cloves garlic, minced
8 cups chicken stock
8 tsp. Chicken broth base (or 8 chicken bouillon cubes)
2 cans fire roasted diced tomatoes
1/2 tsp. Black pepper
1/8 tsp. Chipotle
1/2 tbsp. Italian seasoning
1 tsp. Garlic powder
1 tsp. Onion powder
1/4 tsp. Red pepper flakes
Fry the bacon until it's about half cooked. Drain well. Add all ingredients into a Crock-Pot. Cook on low for 6-8 hours.
